Whee~ I'm so glad exams are over. Over and done with torture! Now I can have fun in the kitchen! Yippie! Finally I can try out those yummy recipes which I have encountered through out the semester!

First off, I'll start with bruschetta. Something that mum came up with in the first half of my semester. My first encounter of Bruschetta was during dinner in a quaint little Italian restaurant at Bandar Sg. Long.. Calabria Restaurant, was it? I've forgotten the name of the shop. It has been years since the restaurant closed down. Pity though... they served pretty good Italian food. I used to love their bruschetta, pizza and their signature pudding. I guess not many people there (at that time... when TAR college just opened) are fond of Italian dishes.

Bruschetta (bru' ket' ta) is an Italian food usually made out of grilled bread, garlic, olive oil, salt and pepper. Bruschetta is easy to prepare and its many variations of ingredients makes it a good party platter, appetizer and as a snack. Variations may include toppings of spicy red pepper, tomato, cured meat, beans, vegetables, herbs and cheese. Here is a simple yet refreshing tasting vegetarian variation:

1 loaf of French bread - sliced about 1 inch thick
Tomatoes - cut into small cubes
Lettuce of any kind - shredded
1/2 lemon - squeezed
Extra virgin olive oil
Salt and pepper to taste

  1. Place tomatoes and lettuce in a bowl. Drizzle on about 1-2 tsp olive oil and lemon juice. Season with salt and pepper to taste. Gently toss them till well mixed.
  2. Grill/toast the bread slices till golden and crispy. Remove from grill/oven.
  3. While bread is still hot, top each slices with the vegetable mixture and serve.

Mummy Dearest

Dear Mum,

We do not know how should we should say it, but "We love you, Mum". Somehow these simple words just cannot express how much we love you. Our gratitude towards you cannot be expressed through words alone. Your unconditional love that you have showered us with all these years have always been treasured by us.

Ok, back to my blog. =P
The cake is vanilla sponge cake with blueberry filling. It's been quite some time since I played around with fresh cream. *Sigh* My skills have gone really rusty. Took me many tries just to have 2 okay looking cream roses.

Then again... it was really relaxing taking my mind off studies. My exams are still on with just a paper to go. Electronic Design, my most dreaded subject of all. Have to persevere for 3 more days, and I'm off on a long long summer break! Whee~
