Saw this on the way out during lunch break. I don't know how it happened. Luckily no one injured.

Strawberry and Vanilla Cups

There's something about strawberries that makes them special. It's fragrance and vibrant red color makes almost any dessert seductive. Most people like their berries plain, with chocolate or vanilla, be it in cakes or puddings. As for me, I personally prefer strawberries with chocolate.

We had extra scoops of strawberry mousse, puree and bits and piece of strawberries. They were scraps of my cousin's birthday cake. It'll be a waste if I were to dispose of them away. Which I almost did since no one at home really craved for mousse. In the end, mum to the rescue! She came up with this nice concoction.

Strawberry mousse, topped with fresh strawberries and a large scoop of vanilla ice cream, drizzled in strawberry puree. Sounds too berry-y, but strangely enough, they didn't!

Now I have a new strawberry dessert favourite!

September Baby

September 11th:

This day of the month holds precious memories for many people. But to me, this very day reminds me of: someone has turned OLDER. Hahaha... Don't kill me ya?

Xin is one of my dearest, yet longest friend ever. She's my cousin in fact. A thought just came through my mind. We grew up together ever since you were born. We lived under the same roof for 5 years? We stayed just doors away now. We went to the same school. We shop, we played Barbie, we yak, we share, we go on holidays, we kick each other, we tolerated each other? ... It's amazing till now we're still like that. For 19 years!! Hahaha... this is my first time ever baking a birthday cake for you. Your requested strawberry mousse birthday cake.

Bye Bye Summer

Alright. I've been gone long enough. Far too long this time.

I finally found a lil time to do some updating. You might have guessed that my classes have begun. Really begun. Time to say goodbye to summer, and welcome autumn with a big "hello". To tell the truth, I'm not very keen on getting back to uni. Not that I hate uni that much, I do miss the companionship that my uni friends provide. It's just that the thought of projects, assignments and exams puts me off. Sigh... Not even a month have passed by and I'm already missing my summer holidays. Aaaaa~~ I want my summer back.

I'm actually not supposed to be here ranting. I'm currently cracking my head writing:

I'm no pro at programming. I'm still learning. I guess anyone who churned their brains for these would want to crap in their blogs!

I've got tonnes of photos and happenings of this month that's been long overdue. Emails and questions that have not been answered. I know some of you are waiting for your photos to be up and been pestering me to update. Haha... I have not forgotten. My apologies for the long delay. I'll reply to your emails and post your photos accordingly by this weekend ok? So look out for them ya?

Pizzzzaaaa!!

Whenever I have pizza, somehow I am reminded of Ninja Turtles. Yes. Especially when young Michelangelo went "Piiiiiiizaaaaaa"! (if I've not mistaken).

Pizza Power!

My favourite was of course, Mikey. A funny fellow that wears orange mask and bands. I grew up watching these cartoons: Ninja Turtles, Power Rangers, Aota man (UltraMan), My Little Pony, Care Bears, Masked Rider, the list goes on and on.

Speaking of pizza, I made some for tonight's dinner. Making homemade pizza has both benefits and drawbacks. First, I know what ingredients I used for my pizza. Secondly, I can really stack up as much pizza toppings as I like! *giggles* Loads of meat, pineapple pieces and cheese!!

The disadvantage: I tend to overload my pizza.

Pizza Dough

2 tsp dry instant yeast
250ml-280ml warm water
4 cups plain flour
3 tbsp olive oil
3/4 tsp salt
1 tsp sugar
Olive oil to greese

1. Place all ingredients in a bowl, keeping aside 30ml water and 1/2 cup flour.
2. Knead all ingredients until soft, smooth and elastic. Add flour while kneading so that the dough will pull away from the sides of the bowl. If the dough is too dry, add in 1 tsp water at a time. If it is too soft or stack, add 1 tbsp flour at a time.
   
3. Form the dough into a ball, cover and leave to ferment, double in size.
4. Greese pans with olive oil. Preheat oven to 200°C.
   
5. Once dough has doubled, take a portion and shape dough into prepared pans.

Pizza Toppings

1/2 a roasted chicken (chunks)
8 chicken sausages (sliced)
1 can pineapple in heavy syrup (drained and cubed)
1 can button mushrooms (drained and sliced thinly)
1 can tomato paste
1 tsp Lea & Perrins sauce
Salt
Pepper

Mozarella cheese

or any other toppings that you like!

1. Mix tomato paste, Lea & Perrins, salt and pepper to taste. Spread tomato mixture over dough.
2. Add desired toppings.
3. Bake 20 minutes, or until crust is golden brown.
   

Serves: 4-6.
