Yay!! Bye bye Year 1!! Hello Summer holidays! 4 months break! How cool can that be? I can finally do things that I've always wanted to all these while. Now what could they be?
Hmm.... Sleep, eat, bake, play games, sleep, play, sleep.

As expected, with so much free time on hand, I could no longer stand doing nothing. I played 2 online games, watched tv, chat online, surf net, thinking that the day will end quickly. But nooooooo!! Only a mere 5 hours had passed by! Now that's a good start. I'd better think of something soon else this whole 4 months will be dead boring.
Heh... So I started to search around the kitchen.
*Gasp!!* Not much ingredients left to play with!! Time to go shopping~

Anyway, I managed to find 3 oranges, half pack of flour, sugar, a few eggs and some leftover almond flakes. Ok, that's good enough. With these I was able to make 12 large orange cupcakes. Looks pretty similiar to the orange muffins I did previously. But the ingredients and texture is totally different. These cupcakes are much lighter, fluffier and moist. A nice kickstart for my summer hols!

Orange Cupcakes
8 oz self raising flour
4 oz castor sugar
250g butter
4 large eggs - separated
1 cup freshly squeezed orange juice
1/4 cup orange rinds
1/2 tsp vanilla essence
Some roasted almond flakes

Preheat oven to 180°C.
In a medium bowl, beat egg whites till stiff, adding half the amount of sugar a lil at a time.
In a large bowl, cream butter and the remaining sugar till light and fluffy. Beat in egg yolks, vanilla essence, orange juice and rinds.
Fold in flour into the butter mixture until combined.
Gently fold in beaten egg whites into the batter.
Pour into greezed/lined large muffin pans.
Sprinkle some roasted almonds on top.
Bake in preheated oven for 30 mins or until lightly golden and cake tester comes out clean.

Bakes 12 large cupcakes.
