Orange Muffins

Waking up to a bunch of freshly baked muffins and a cup of coffee... Heavenly. Orange muffins has the savory like taste of muffins; yet it has a tinge of the fruity citrus flavour. This orange muffins recipe were adapted and slightly modified from Nigella Bites.
I added raisins in the batter as I liked my muffins to have that sudden burst of sweetness... and more zest for more bite and flavour. The muffins were not sweet and the raisins gave it a zing here and there. The low sweetness level may be due to the usage of freshly squeezed orange juice.

Orange Muffins

75g unsalted butter - melted
250g self raising flour
25g almond meal
1/2 tsp soda bicarbonate
1 tsp baking powder
75g castor sugar
zest of 1-1/2 oranges
100ml orange juice
100ml milk
1 egg
handful of raisins

Preheat oven to 200°C. Combine flour, almond meal, soda bicarbonate, baking powder, sugar, raisins and orange zest into a bowl. Leave aside. In another bowl, mix orange juice and milk together. Then whisk in the egg and cooled melted butter. Slowly pour the liquid mixture into the dry ingredients while barely mixing it with a fork. The batter will be lumpy. Leave it as it is. Lumpy batter makes light textured muffins. Spoon the batter into a muffin tray lined with paper cases. Bake it for 20 mins or until skewer comes out clean. Leave to cool on a wire rack. Best when served warm.

You can eat it plain or spread with butter/ marmalade/ cream/ or anything you like... As for me, I had it with butter and also tried with some of my leftover whipping cream before devouring it. Both tasted yummy! =P

The photo I took with my low pixel camera phone looks kinda blueish. Who cares? It tasted yummy anyway. *grin*
**For original taste, omit the raisins and reduce the zest to 1 orange for less tangy flavour and bite.
